Foodies are flocking to Fraser Island, for culinary experiences that are authentically Australian.

Whilst some restaurants only seek to dish up the ‘flavour of the month’, Kingfisher Bay Resort has chosen to stick to their roots, drawing inspiration from the island’s traditional owners, the Butchulla people.

The resort Chefs have cleverly crafted a menu that reflects the history and flavourful palette of paradise. Locally-sourced produce is infused with an array of native bush tucker ingredients, from the refreshing citrus of lemon aspen, to the sweet 'peach-like' flavour of the quandong and paired with matching wines. 

This unique offering is capturing travellers’ attention the world-over, and it's also one of the reasons that we've introduced our Tastes of Seabelle degustation experience for resort guests and visitors.

Akudjura Salt And Pepperberry Calamari Crocodile Salad served with pepperberry aioli, watermelon, mint, Persian feta, red onion salad and a rosella glaze.
Paired with Redbank Prosecco, King Valley, Victoria, 2015 or James Squire Four Wives Pilsner.

Wide Bay Mackerel served with cold smoked local mackerel fillet, spiced eggplant, coal cooked cucumber, lemon aspen yoghurt, mussel and pepperberry seasoning.
Paired with Not Your Grandma's Riesling, Eden Valley, SA, 2015 or James Squire One Fifty Lashes Pale Ale.

Braised Duck Leg served with burnt pickled grapes, quandong, lillypilly, orange, pistachio and rosella glaze.
Paired with La Vieille Ferme Rosé, Cotes Du Ventoux, France, 2014 or James Squire Nine Tales Amber Ale.

Tea Tree-Smoked Kangaroo served with celeriac puree, baby beetroots, pomegranate, orange, bunya nuts and parmesan.
Paired with Yalumba Patchwork Shiraz, Barossa Valley, SA, 2013 or James Squire Jack of Spades Porter.
