BUSH TUCKER TALK AND TASTE
Learn about Australian cuisine it will change your ideas on food preparation. As Australia develops its own cuisine, the natural bush food that is growing all around us is becoming increasingly popular.
Find out how these foods can be used to enhance most dishes. Rangers present a selection of foods in their natural, raw state and explain where you can find these foods.
Chef shows you how to use them presents the cooked dishes for you to taste and shares some recipe secrets.

PALATABLE PAIRINGS
During Palatable Pairings, our dynamic chef and resident wine duo team up in the Seabelle Deck to match food and wine in a fun environment.
Chef prepares two dishes using local ingredients which are then matched with wines. The Palatable Pairings Panel then discuss and demonstrate what to look for when matching food and wine in a contemporary sense and dispel some of the myths about what wine should be consumed with what food. This is also a great opportunity to quiz chef on recipes and cooking techniques.
Every Monday and Thursday from 5.30pm until 6.30pm. Bookings essential. $25 per person.
WINES ON WEDNESDAYS
Wine novices are introduced to the art of wine tasting and get to taste some very good Australian wines. Each guest is given written and verbal information and guided through an entertaining hour of wine tasting, covering the history, origins and characteristics of Australian wines.
The wines chosen vary from week to week and provide a mix of boutique, mainstream and exotic wines plus a significant range of Queensland wines.
