FRASER ISLAND: Easter comes but once a year and the good folks on Fraser Island aren't missing the chance to celebrate with the best of the season.

Over on the island's eastern side, Japanese-born Hitomi Imai has been trialing her Hot Cross Bun recipe for the first time this year and the tasty Easter treats are already hopping out Eurong Beach Resort's bakery door. And, in the spirit of the season, Assistant Resort Manager, David Farrelly, has dug out his top-secret pancake recipe to share with resort guests at breakfast on Easter Sunday.

"I lived and worked in Ireland for seven years," said Mr Farrelly, "And I got this recipe from an Irish Chef who had served up these pancakes every year for the 40 years he worked at the Burlington Hotel in Dublin. It's safe to say these pancakes are absolutely delicious, so I'm happy to do my bit to spread a little Eurong Easter cheer."

Whilst the Easter bunny won't make an appearance at Eurong Beach, David Farrelly says they're planning a special Easter egg hunt, complete with chocolately treats, for the kids on Easter Sunday and resort tours will continue to run as normal for guests. The resort's bakery will run a new takeaway menu for the holidays and although the famous Beach Bar will not be open on Good Friday, guests will still be able to purchase alcohol with their meals at McKenzie's Restaurant.

At Kingfisher Bay Resort, on Fraser's western side, Kingfisher Bay Resort's ranger team is preparing a school holiday Easter program for their deputised Junior Eco Rangers. High on the agenda is fun eco stuff like Night Walk Adventures, Treasure Hunts and Scavenger Challenges, Fishing Frenzy challenges, Campfire night and star gazing.

Easter Saturday will also see kids in the Junior Eco Ranger program make Easter egg baskets as part of bush craft. Easter Sunday wouldn't be Easter without a special appearance from the Easter Bunny who, under the cover of night, will be hiding Easter eggs in and around the resort grounds and poolside for a special children's Easter egg hunt.

For the big kids, the resort will run a Seafood Buffet on Good Friday and Easter Saturday and a native-themed buffet for Easter Sunday and Easter Monday in the Maheno restaurant. The resort's popular Sand Bar restaurant will also reopen with lunch, all-day dining and dinner menus. Beauty Spots tours will also depart daily over Easter and the resort's What's On guide is filled with outdoor activities.
